Dark Chocolate Cherry Coconut Almond Cookies

 


CREAM:

1 cup unsalted butter (2 sticks)

1 cup white sugar

1 cup light brown sugar

MIX IN WET:

2 eggs

2-4 teaspoon vanilla extract

2 teaspoon almond extract

MIX IN DRY:

2 and 2/3 flour

1 teaspoon baking powder

1 teaspoon baking soda

1 teaspoon table salt

1/2 teaspoon cinnamon

1 teaspoon espresso powder

MIX IN:

1.5 cup dark chocolate chips

1 cup shredded coconut

1 cup dried cherries

1 cup sliced almonds

SPRINKLE:

Roll cookie dough balls in raw sugar

Maldon salt on top of cookie dough balls before baking


White Chocolate Raspberry Blueberry Cornflake Cookies

CREAM:

1 cup unsalted butter (2 sticks)

1 cup white sugar

1 cup light brown sugar

MIX IN WET:

2 eggs

2-4 teaspoon vanilla extract

MIX IN DRY:

2 and 2/3 flour

1 teaspoon baking powder

1 teaspoon baking soda

1 teaspoon table salt

1/2 teaspoon cinnamon

MIX IN:

2 bars of white chocolate Lindt

1/2 cup Raspberry Jam Bits

1 bag Trader Joe's freeze dried Raspberries (crushed)

1 bag Trader Joe's freeze dried Blueberries (crushed)

4 cups cornflakes

SPRINKLE:

Maldon salt on top of cookie dough balls before baking

Chocolate Chip Cherry Almond Cookies


Variation on my go to chocolate chip cookie recipe

1 cup unsalted butter - 2 sticks

1 cup white sugar

1 cup light brown sugar


2 eggs

2-4 tsp vanilla extract

2 tsp almond extract


2 and 2/3 cup flour

1 tsp baking powder

1 tsp baking soda

1 tsp regular salt

1 tsp cinnamon 

1 tsp espresso powder


1 cup dark chocolate chips

1 cup semi sweet chocolate chips

1 cup slivered almonds

1 cup dried cherries


Cream butter + sugar

Mix in egg + extracts

Mix in flour and dry ingredients

Mix in add ins


Bake 350 degrees until tasty looking

2025 Goals - Trying out new recipes versus the same old same old

I've been in a bit of a baking rut in recent years baking the same handfuls of recipes on repeat. This year, I'm carving out my Wednesday evenings to try new recipes. Jotting down the results here since I'm starting to get forgetful.

Feb 12, 2025: Chocolate Dipped Madelines (Cookies by Jesse Szewczyk P. 58)

These were a big hit and was a good excuse to use my long forgotten Madeline Pans. 

Feb 13, 2025: Same Old but with gummy worms

Not a new recipe, but baked these giant cookies for a friend's son. Turns out, gummy worms are a tasty addition to the classic chocolate chip cookie. Who knew!

Feb 19: S'mores Cookies (100 Cookies by Sarah Kieffer P.251)

Not Pictured: Would have loved these cookies to be more "grahamy." Whilst delicious, my go to chocolate chip recipe wins over this one and is easier to boot.

Feb 26: Vanilla Bean Sables (Baking for the Holidays by Sarah Kieffer P. 143)

Adam picked out this recipe and they were a hit with him. Would make them a tad bit smaller next time since it's a rich cookie, but Adam declared it a "bake again."

Feb 27: Cornmeal (Coconut) Macaroons (Baking Yesteryear by B. Dylan Hollis P. 31)

A recipe straight out of the 1900s when cornflakes were a newfangled innovation so people started sticking them into everything. I thought they were a bit basic, but a few people really LOVED them and wanted photos of the cookie to keep in their photo roll favorites.
