Black Bean Soup

Adam and his coworkers have a weekly soup potluck rotation where every Tuesday, someone makes a pot of soup to share. A few weeks ago, Adam was raving about this Black Bean Soup Alissa had made so he in turn made it for some friends who stopped by for lunch. It's delicious and you won't believe how ridiculously easy it is. I'd bet even MGDub could get motivated to make this.

1 can black beans
1 can refried black beans
1 can chicken broth (or veggie)
1 jar salsa

Dump all ingredients in a pot. Heat, simmer, stir for 20 minutes. EAT!

Especially good when served with blue corn chips and shredded cheese. I used the Trader Joe's smoky peach salsa and Newman's Own Garlic Salsa. Tasty! I also had the Trader Joe's Corn (no tomato) salsa to add. Delicious!

i kind of want to make this now...do you drain and rinse the black beans first?

Adam says he dumped the black beans right in from the can liquid and all. Now you have no excuses not to make it Wheezy...probably keeps or freezes well too if you don't eat it all. There's nothing much in it that's super perishable.

you know me too well ann, believe it or not the rising and draining of the beans might have been too much work for me...you're right now, i have no excuses! i think i even have all of the ingredients already!

if you drain the liquid it makes you less farty. and if you rinse, even less farty. but if you and your company don't mind, then just dump it all in! (i usually at least drain them though.)

the thing that i LOVE is to squirt a little lime juice in and swirl it around in the soup. SO GREAT! also a dollop of sour cream is a nice garnish (and very helpful if your salsa is too hot).
